Sweet & Sour Vegetable Buddha Bowl
Serves: 2–3 people
Ingredients
- Water – 3 cups
- Corn flour – 2 tsp
- Tomato sauce – 1½ cups
- Vinegar or lemon juice – 1 tsp
- Sugar – 1 tsp
- Salt – to taste
- Black pepper – to taste
- Ajinomoto – 1 tsp (optional)
- Onion – 2, finely chopped
- Cabbage – ¼ cup, chopped
- Capsicum – ½ cup, chopped
- French beans – 5–6 pieces, chopped
- Cauliflower – ¼ cup
- Broccoli – ¼ cup
- Oil – 1 tbsp
- Paneer cubes – 2 tbsp (optional)
Method
- Mix corn flour, tomato sauce, salt, and ½ tsp black pepper in ½ cup water. Keep aside.
- Heat oil in a pan and sauté the onion on high flame for 2 minutes.
- Add cauliflower, broccoli, French beans, and the remaining water. Cook for 2–3 minutes.
- Add cabbage and capsicum and mix well.
- Pour in the prepared corn flour mixture while stirring continuously.
- Cook for 2–3 minutes until the sauce thickens and becomes glossy.
- Turn off the heat.
Serving Suggestions
- Serve hot with steamed rice or noodles.
- Add paneer cubes for extra texture and protein.
- Serve in a bowl as a layered Buddha bowl for presentation.
Tips
- Do not overcook vegetables; keep them slightly crunchy.
- Stir continuously after adding corn flour to avoid lumps.
- Adjust sweetness and sourness as per taste.
