Festive Colorful Sweet Rice Recipe


Serves: 4–6 people

Ingredients

  • Basmati rice – 1 cup (aged, good quality)
  • Sugar – ¾ cup (adjust to taste)
  • Green cardamom – 4 pods (lightly crushed)
  • Cinnamon stick – 2 small pieces
  • Almonds – ½ cup (sliced)
  • Cashew nuts – ¼ cup
  • Ghee – 1 tablespoon
  • Vanilla essence – ½ teaspoon
  • Yellow food color – ¼ teaspoon (dissolved in 1 teaspoon water)
  • Green food color – ¼ teaspoon (dissolved in 1 teaspoon water)
  • Red food color – ¼ teaspoon (dissolved in 1 teaspoon water)

Preparation

  1. Rinse the basmati rice thoroughly until water runs clear.
  2. Soak the rice for 30 minutes.
  3. Cook the rice until it is about 80% done (grains should remain slightly firm).
  4. Drain the rice completely and keep it aside.

Method

  1. Heat ghee in a deep pan.
  2. Add cardamom, cinnamon, almonds, and cashew nuts. Sauté until lightly golden and aromatic.
  3. Add sugar and ½ cup water. Stir and cook until the sugar fully dissolves and forms a light syrup.
  4. Add the partially cooked rice and mix very gently to avoid breaking the grains.
  5. Add vanilla essence and mix lightly.
  6. Add yellow food color solution and fold gently into the rice.
  7. Cook on low flame for 1–2 minutes so flavors absorb well.
  8. Turn off the heat and allow it to rest for a few minutes before serving.

Optional Festive Presentation

  1. Divide the cooked rice into 3–4 equal portions.
  2. Keep one portion plain/yellow as the base color.
  3. Mix green and red food color solutions separately into other portions.
  4. Arrange in layers or sections for a decorative festive look.
  5. Shape creatively, such as a flag design for Independence Day or Republic Day.

Tips

  • Always use aged basmati rice for fragrance and long grains.
  • Do not overcook rice; slight firmness keeps grains separate.
  • Mix gently at every stage to maintain texture.
  • Adjust sugar based on sweetness preference.
  • Always dissolve food colors before adding to avoid patches.
