Ingredients

  • 1 cup boiled penne pasta
  • 1 cup milk
  • 2 tbsp grated Amul cheese
  • 2 tbsp beans, finely chopped
  • 2 tbsp carrot, finely chopped
  • ¼ cup mushrooms, sliced
  • ¼ cup capsicum, diced
  • 2 tbsp sweet corn kernels
  • ¼ cup cottage cheese (paneer), cubed
  • 1 tsp oil
  • 1 tbsp corn flour
  • ½ tsp salt, or to taste
  • ½ tsp oregano
  • ¼ tsp black pepper powder
  • ¼ tsp chilli flakes

Method

  1. Boil the beans, carrot, and sweet corn kernels for 4–5 minutes or until tender. Drain and set aside.
  2. Heat oil in a pan over medium heat. Add mushrooms and capsicum, and sauté for 2–3 minutes until slightly tender. Remove and set aside.
  3. In a small bowl, mix corn flour with 2 tablespoons of milk to make a smooth slurry.
  4. Pour the remaining milk into a pan and heat it over medium flame.
  5. Add the corn flour slurry and stir continuously to avoid lumps.
  6. Cook for 2–3 minutes, stirring continuously, until the sauce becomes smooth and slightly thick.
  7. Add grated cheese and stir until it melts completely.
  8. Add salt, oregano, black pepper powder, and chilli flakes. Mix well.
  9. Add the boiled vegetables, sautéed mushrooms, and capsicum. Stir to combine.
  10. Add paneer cubes and boiled penne pasta. Mix gently until everything is evenly coated with the white sauce.
  11. Cook for 1–2 minutes, stirring gently.
  12. Remove from heat and serve hot.

  • Stir the corn flour mixture well before adding it to the milk to ensure a smooth, lump-free sauce.
  • Keep the heat on medium and stir regularly while cooking the sauce to prevent it from sticking or burning.
  • For a richer flavour, add 1 teaspoon butter to the milk before preparing the sauce.
  • Adjust the salt, black pepper, and chilli flakes according to your taste.
  • If the sauce becomes too thick, add a splash of milk and stir until it reaches the desired consistency.
