White Sauce Pasta
Serves: 2–3 people
Ingredients
- 1 cup boiled penne pasta
- 1 cup milk
- 2 tbsp grated Amul cheese
- 2 tbsp beans, finely chopped
- 2 tbsp carrot, finely chopped
- ¼ cup mushrooms, sliced
- ¼ cup capsicum, diced
- 2 tbsp sweet corn kernels
- ¼ cup cottage cheese (paneer), cubed
- 1 tsp oil
- 1 tbsp corn flour
- ½ tsp salt, or to taste
- ½ tsp oregano
- ¼ tsp black pepper powder
- ¼ tsp chilli flakes
Method
- Boil the beans, carrot, and sweet corn kernels for 4–5 minutes or until tender. Drain and set aside.
- Heat oil in a pan over medium heat. Add mushrooms and capsicum, and sauté for 2–3 minutes until slightly tender. Remove and set aside.
- In a small bowl, mix corn flour with 2 tablespoons of milk to make a smooth slurry.
- Pour the remaining milk into a pan and heat it over medium flame.
- Add the corn flour slurry and stir continuously to avoid lumps.
- Cook for 2–3 minutes, stirring continuously, until the sauce becomes smooth and slightly thick.
- Add grated cheese and stir until it melts completely.
- Add salt, oregano, black pepper powder, and chilli flakes. Mix well.
- Add the boiled vegetables, sautéed mushrooms, and capsicum. Stir to combine.
- Add paneer cubes and boiled penne pasta. Mix gently until everything is evenly coated with the white sauce.
- Cook for 1–2 minutes, stirring gently.
- Remove from heat and serve hot.
Tips
- Stir the corn flour mixture well before adding it to the milk to ensure a smooth, lump-free sauce.
- Keep the heat on medium and stir regularly while cooking the sauce to prevent it from sticking or burning.
- For a richer flavour, add 1 teaspoon butter to the milk before preparing the sauce.
- Adjust the salt, black pepper, and chilli flakes according to your taste.
- If the sauce becomes too thick, add a splash of milk and stir until it reaches the desired consistency.
Serving Suggestions
- Garnish with extra grated cheese, oregano, and chilli flakes before serving.
- Serve hot with garlic bread, toasted bread, or breadsticks.
- Pair with a fresh green salad for a complete and satisfying meal.
