Ingredients

  • 2 cups penne pasta, boiled and drained
  • 100 g paneer, cut into cubes
  • ½ cup cabbage, finely chopped
  • ½ cup capsicum, diced
  • ½ cup carrots, finely chopped
  • ¼ cup beans, finely chopped
  • 2 processed cheese cubes (about 35 g), grated
  • 1 tsp garlic, finely chopped
  • 3 tbsp tomato sauce or ketchup
  • ¼ tsp sugar
  • ¼ tsp chilli flakes
  • 2 tsp vinegar (optional)
  • 3 tsp cornflour mixed with ¼ cup water
  • ¾ cup water
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh coriander, chopped, for garnish

Method

  1. Boil the carrots and beans until tender. Drain and keep aside.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the chopped garlic and sauté for a few seconds until fragrant.
  4. Add the paneer cubes and cook for 1–2 minutes, stirring gently.
  5. Add the capsicum, cabbage, boiled carrots, and boiled beans. Stir-fry for 2–3 minutes until the vegetables are cooked but still slightly crunchy.
  6. Add the tomato sauce, sugar, chilli flakes, salt, black pepper, and vinegar. Mix well so the vegetables are evenly coated.
  7. Pour in the water and bring the mixture to a gentle simmer.
  8. Stir the cornflour slurry and add it to the pan. Cook, stirring continuously, until the sauce thickens slightly.
  9. Add the boiled penne pasta and toss gently until evenly coated with the sauce.
  10. Add the grated cheese and stir until melted and well combined.
  11. Garnish with fresh coriander and serve hot.
