Eggless Suji Tutti Frutti Cake (Air Fryer)
Serves: 6–8 slices
Ingredients
- Semolina (suji) – 2½ cups
- Sugar – 1 cup
- Curd – 1 cup
- Milk – 1 cup
- Neutral oil – ½ cup
- Tutti frutti (red, green, and yellow) – ½ cup
- Baking powder – 1 tsp
- Baking soda – ½ tsp
- Salt – 1 pinch
Method
- In a large mixing bowl, combine curd, sugar, milk, and oil. Whisk until smooth.
- Add semolina and mix well. Allow the batter to rest for 20–30 minutes so the semolina absorbs the liquid.
- Add baking powder, baking soda, and salt. Mix gently without overmixing.
- Fold the tutti frutti evenly into the batter.
- Pour the batter into a greased baking tin or air fryer-safe cake mould.
- Preheat the air fryer at 180°C for 5 minutes.
- Bake at 160°C for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cake and allow it to cool completely before slicing.
