Eggless Suji Tutti Frutti Cake (Air Fryer)

Serves: 6–8 slices

Ingredients

  • Semolina (suji) – 2½ cups
  • Sugar – 1 cup
  • Curd – 1 cup
  • Milk – 1 cup
  • Neutral oil – ½ cup
  • Tutti frutti (red, green, and yellow) – ½ cup
  • Baking powder – 1 tsp
  • Baking soda – ½ tsp
  • Salt – 1 pinch

Method

  1. In a large mixing bowl, combine curd, sugar, milk, and oil. Whisk until smooth.
  2. Add semolina and mix well. Allow the batter to rest for 20–30 minutes so the semolina absorbs the liquid.
  3. Add baking powder, baking soda, and salt. Mix gently without overmixing.
  4. Fold the tutti frutti evenly into the batter.
  5. Pour the batter into a greased baking tin or air fryer-safe cake mould.
  6. Preheat the air fryer at 180°C for 5 minutes.
  7. Bake at 160°C for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove the cake and allow it to cool completely before slicing.

  • Check doneness using a toothpick inserted in the center.
  • Cool the cake completely before cutting for neat slices.
